Boy's Recipe Wins Him Trip To White House

A Huron boy will be traveling to the White House to eat lunch with our First Lady.
Nine-year-old Owen Kerkvliet entered a recipe in the “Healthy Lunchtime Challenge.” It’s a contest that’s part of Michelle Obama’s “Let’s Move” campaign. It’s a campaign promoting healthy eating habits and decreasing obesity. Owen will be representing South Dakota at the Lunch.
Carrots, broccoli, spinach and red pepper is all Owen Kerkvliet really needed in
his recipe for success. Owen along with 53 others won an opportunity to eat lunch with First Lady Michelle Obama and tour the White House
"I entered Owen. I never thought in a million years that he would get chosen as the winner," said Owen’s mother, Rebekah Storm.
Owen and his mom Rebekah came up with the recipe from scratch. They picked out the foods together and shopped together. The final product: "Hidden Veggie Lasagna," started even before the contest.
"After years of trying to get my kids to eat veggies, I just started putting them in the food and he didn't even realize they were there," said Storm.
It starts with cooking the vegetables in a frying pan until they are tender. In a separate bowl, stir ricotta cheese and spinach. Layer sauce, noodles and vegetables just like regular lasagna.
The finishing touch to hidden veggie lasagna is sprinkling on the cheese. Then just pop it in the oven for 45 minutes.
"It's the perfect amount of time," said Kerkvliet.
Out of it all, Owen is excited to tour the sites.
“I'm excited for the museum and seeing where Lincoln died," said Kerkvliet.
If the opportunity arises, he knows what he wants to say to Mr. President.
"Pleased to meet you," said Kerkvliet.
Owen’s big lunch is set for July 9.
